Fried Bananas with Glace Ginger Icecream

Ingredients (serves 4)

  •  1L of good quality vanilla ice cream
  •  2 tbs finely chopped glace ginger
  •  80g dark chocolate, chopped
  •  30g butter
  •  8 bananas, peeled, halved lengthways then halved again

 Method

  1. Allow the ice cream to soften a little. Gently mix through the ginger and return to the freezer to set.
  2. Melt chocolate pieces in a double bowl over simmering water. Set aside.
  3. Heat a barbeque flat plate or frying pan over a medium-high heat. Add the butter and melt. Add the bananas to the plate/pan and cook for 2-3 minutes on each side until fruit is golden and softened slightly.
  4. Serve the bananas with a large scoop of the glace ginger ice cream and drizzle with the melted chocolate.
